Homemade Pumpkin Pie

Christmas is maybe behind some of you, but I’m still waiting for mine in January. Before that, I’m super excited about New Year’s Eve, even though I still do not have any plans. However, that should not stop me from baking. And what’s better than pumpkin pie – just to bring that scent of winter at my home. So, whoever wants to try making this delicious pie, I am more than happy to share my recipe with you. Ready? Let’s start!

Ingridients:

– 2 eggs

– 1/2 cup rice malt syrup

– 1/2 teaspoon of salt

– 2 teaspoons of cinnamon

– 1 teaspoon of ground ginger

– 1/4 teaspoon of ground cloves

– 1/4 teaspoon of ground cardamom

– 1/2 teaspoon of lemon zest

– 2 cups of pumpkin purée

– 1 1/2 cup evaporated milk

– 1 crust

Method:

1. Preheat your oven to 250°C

2. In a large bowl beat the eggs and mix in rice malt syrup, salt, spices (cinnamon, ground ginger, ground cloves, cardamom and lemon zest)

3. In that mixture add pumpkin purée (I couldn’t find it anywhere so I used my squashed pumpkin previously cooked), add evaporated milk and beat it all together until everything is well mixed

4. Pour the mixture into an uncooked pie shell and bake at a high temperature of 200°C for around 1 hour. 

5. Cool the pumpkin pie for around 2 hours, serve it with some hot chocolate and enjoy!

Nekima od vas Božić je na žalost već prošao, dok moj stiže tek u januaru. Pre toga me čeka ona novogodišnja noć kojoj se radujem iako pak nemam osećaj da je pred vratima, niti još uvek imam planove za istu. U svakom slučaju, to me ne može sprečiti od malo poigravanja u kuhinji i pravljenja kolača od bundeve – čisto da mi dom zamiriše na zimu. Stoga, ukoliko želite da isprobate moj recept, biće mi i više nego drago da ga danas podelim sa vama. Spremni? Pa, da počnemo!

Sastojci:

– 2 jaja

– 1/2 šoljice pirinčanog sirupa

– 1/2 kašičice soli

– 2 kašičice cimeta

– 1 kašičica mlevenog đumbira

– 1/4 kašičice mlevenog karanfilčića

– 1/4 kašičice mlevenog kardamoma

– 1/2 kašičice soka od limuna

– 2 šoljice pirea od bundeve

– 1 1/2 šoljice mleka u prahu

– 1 kora  

Način pripreme:

1. Zagrejati rernu na 250°C

2. U veliku posudu umutiti jaja a zatim dodati pirinčani sirup, so, začine (cimet, mleveni đumbir, mleveni karanfilčić, mleveni kardamom i sok od limuna)

3. U tu smesu dodati pire od bundeve (ukoliko nigde ne možete da pronađete već gotov, jednostavno kao i ja skuvajte bundevu i izgnječite je), zatim dodati mleko u prahu i mešati dobro dok se sve ne sjedini

4. Dobijenu smesu sipati u kalup za pečenje (ili na koru ukoliko treba da se peče) i peći jedan sat na temperaturi od 200°C.

5. Ostavite kolač da se hladi 2 sata, zatim ga preručite na koru (ukoliko ste ih odvojeno pekli), servirajte u toplu čokoladu i uživajte u zimskoj čaroliji!
